SUSHI & RAW BAR CHEF OPPORTUNITY AT THE SHORE AND COUNTRY CLUB The Shore and Country Club is currently seeking an experienced Sushi & Raw Bar Chef to join our culinary team for the 2026 season. This position requires evening, weekend, and seasonal availability. The Sushi & Raw Bar Chef reports directly to the Executive Chef and Sous Chef and is responsible for the preparation, execution, and presentation of all sushi, sashimi, and raw bar offerings during à la carte service, special events, and private functions. This role requires precision, consistency, and a strong commitment to food quality, freshness, and presentation standards. KEY RESPONSIBILITIES Duties include, but are not limited to: Prepare sushi, sashimi, and raw bar items to order with attention to freshness, portion control, and presentation standards. Maintain a clean, organized, and fully stocked sushi/raw bar station throughout service. Ensure proper handling, storage, and rotation of seafood and perishable ingredients in accordance with food safety standards. Monitor inventory for sushi and raw bar items, communicate shortages, and assist with daily prep needs. Maintain strict food safety, sanitation, and cleanliness standards in compliance with health codes and Club policies. Assist with the setup and breakdown of the sushi/raw bar station before and after service. Collaborate with the culinary team to ensure smooth, efficient service during high-volume periods. Execute sushi and raw bar components for special events and banquets as directed by the Executive Chef. Uphold consistency, quality, and presentation standards at all times. CANDIDATE QUALIFICATIONS 2+ years of experience as a Sushi Chef or Raw Bar Chef in a high-volume restaurant, hotel, or club environment. Strong knowledge of sushi preparation techniques, knife skills, and seafood handling. Understanding of food safety standards specific to raw fish and seafood handling. Ability to work efficiently under pressure in a fast-paced, team-oriented environment. Strong attention to detail, consistency, and presentation. Positive attitude, professional demeanor, and strong communication skills. Culinary training or sushi certification is a plus, but not required. Flexible availability, including nights, weekends, and holidays during the Club’s operating season. Passion for culinary excellence and high-quality ingredients. PHYSICAL REQUIREMENTS This position requires the ability to perform essential job functions, including standing for extended periods, reaching, bending, and the ability to lift up to 50 pounds.
